Dubai Chocolate Brownies
Dubai Chocolate Brownies combine two textures that work surprisingly well together: rich, fudgy chocolate brownies and a crisp, creamy pistachio-kataifi filling inspired by Dubai chocolate. The brownies stay deeply chocolatey and soft in the center, while toasted shredded phyllo adds a delicate crunch between the layers. A thin chocolate topping finishes everything without making the dessert overly complicated.

How to Make Dubai Chocolate Brownies
Step 1: Prepare the Brownie Batter
Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal. Whisk the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs and vanilla and whisk until glossy.
In a separate bowl, combine the flour, cocoa powder, and salt. Fold the dry ingredients into the wet mixture just until no dry streaks remain. Stir in the chocolate chips. Avoid overmixing, since that can make the brownies cakier rather than fudgy.
Step 2: Toast the Kataifi
Melt the 2 tablespoons butter in a large skillet over medium heat. Add the chopped kataifi and cook for about 5–7 minutes, stirring frequently, until the strands become golden brown and crisp. Keep a close eye on them because kataifi can go from golden to burnt quickly.
Remove from the heat and let it cool for a few minutes.
Step 3: Make the Pistachio Filling
Transfer the toasted kataifi to a bowl. Stir in the pistachio spread, tahini, and a small pinch of salt until evenly coated. The mixture should be thick but spreadable, with visible crisp kataifi strands throughout.
Step 4: Layer the Brownies
Spread half of the brownie batter evenly into the prepared pan. Gently spread the pistachio-kataifi mixture over the batter, keeping it slightly away from the edges. Cover with the remaining brownie batter and smooth the surface.
Bake at 350°F for 30–35 minutes. The edges should look set while the center remains slightly soft. A toothpick inserted into the brownie portion should come out with moist crumbs rather than completely clean.
Step 5: Cool and Add Chocolate
Let the brownies cool completely in the pan. For cleaner slices, chill them for about 30 minutes after cooling. Melt the chopped chocolate with the oil in short microwave intervals, stirring between each interval until smooth.
Spread the chocolate over the chilled brownies and immediately sprinkle with chopped pistachios. Allow the topping to set before cutting.
Step 6: Slice and Serve
Lift the brownies from the pan using the parchment overhang. Use a sharp knife to cut them into 16 squares, wiping the knife between cuts for cleaner edges. The finished brownies should show a fudgy chocolate exterior, a creamy pistachio center, and visible crisp kataifi strands.
Cooking Tips
- Toast the kataifi carefully. Golden brown gives the filling its best crunch; dark
